Chinese Style Fried Noodles
Chinese noodles is pan fried with marinated chicken, prawns, eggs, spices, vegetables and sauce (soy, fish and sesame) to make this popular main course.
Ingredients
- 400 grams chinese noodles
- 4 chicken breasts
- 250 grams prawns
- 2 carrots, cut into juliens
- 2 cups of shredded cabbage
- 2 cups of bean sprouts
- 3 eggs
- 1 tablespoon fish sauce
- 2 tablespoon dark soy sauce
- 1 tablespoon sesame sauce
- 4 tablespoon oil
- 5 cloves of garlic roughly chopped
- 2 cups of finely cut chives
- 2 cups of finely cut spring onions
- Salt and pepper to taste
Instructions
- Bring water to a boil in a large pot and add a little salt. Add the noodles and with the help of chopsticks or forks untangle the noodle and cook until 3/4 done
- Drain and rinse under cold water and put aside
- Wash and cut the chicken into long thin strips (about 1/2 cm inch)
- Marinate the chicken with the fish sauce, sesame oil, salt and pepper to taste
- Remove the vein and shell from the prawns and wash
- Marinate the prawns with 1 crushed garlic, salt and pepper to taste and put aside
- Crack the eggs in a bowl and add salt and pepper to taste and beat well
- In a large wok or skillet, heat 1 tablespoon oil and add the egg
- Cook for a few minutes on one side and then turn on the other side
- Remove egg on a plate and allow to cool and cut into long fine strips and put aside
- In the same wok add the 2 tablespoon oil and stir fry the chicken until it is cooked
- Drain the chicken in a plate and put aside
- In the same wok add the prawns and stir fry for 1 minute, drain on a plate and put aside
- Put the remaining oil the wok and add the remaining garlic, the shredded cabbage, carrots juliens and little by little add the noodle by taking extra care of not breaking the noodles
- Add the chicken, prawns, eggs
- Add the dark soy sauce, salt and pepper to taste
- Add the sprouted beans and give a quick stir
- Turn off the heat and add the chives and spring onions
